Whiskey Brownies with Chocolate Glaze
These are a family favorite, but only for the adults. There’s a lot of fun packed into these tiny treats. We call them Buzz-Buzz Brownies because the coffee and the whiskey deliver a double-whammy. Easy to make, and oh-so-fun-to-eat. Enjoy responsibly.
1 cup butter
6 ounces dark chocolate
1½ cups superfine sugar
1 cup whiskey
1 tablespoon instant coffee granules
¾ cup flour
¼ cup self-rising flour
3 tablespoons unsweetened cocoa powder
2 eggs, beaten until fluffy
3 tablespoons whiskey, for sprinkling
½ cup cream
4 ounces dark chocolate
Preheat the oven to 325°F. Grease and flour an 8 inch square pan. Put the instant coffee, butter, chocolate, sugar and 1 cup whisky in a double-boiler. Heat until all ingredients are melted and becomes a consistent, thick sauce. Sieve the plain flour, self-rising flour and cocoa into a large bowl. Pour the butter mixture onto the flour mixture and whisk until just combined. Whisk in the eggs. Pour into the prepared pan. Bake for about 1 hour 15 minutes, or until a toothpick comes out clean when inserted in the center. When ready, sprinkle the extra whiskey over the hot cake. Leave in the pan for 20 minutes, then transfer onto a wire rack to cool completely.
For the chocolate glaze, put the cream and the chocolate in a small double-boiler and heat. Stir until it’s a nice, consistent chocolate sauce. Then set aside to cool and thicken a little. Drizzle the glaze over cut brownie pieces, allowing it to drizzle over the sides. Let stand until glaze is set.
