Crack Open Some Whiskey, Let’s Flambé.

Cooking with Whiskey.

This is a simple and delicious meal, real back-to-basics stuff. So, if you find yourself drinking whiskey and feeling a tad famished, this is your game plan.

What you need:

•    5 or 6 sardines
•    yellow onion
•    quarter stick of butter
•    6 oz whiskey
•    salt, pepper
•    a stick lighter

What you do:

Heat up a cast iron skillet to medium, melt the butter. Cut up the onion into half rings. Add it to the pan when the pan is hot. Cook onions for 3-4 minutes, until semi-translucent. Clean sardines while onions are cooking. Cut along the belly from the head to tail. Season sardines in salt and pepper, add to pan. Cook on one side for 4-5 minutes. Flip, cook for 3 minutes. After 3 minutes, turn the heat up. When the pan is obviously super hot, add whiskey and light on fire. You will now have a pan with a live fire in it. Don’t freak out. Let the sardines flambe for a minute or two. Turn off heat, rest sardines, enjoy the rest of the whiskey.
